    December 6, 2002: CALL him brave. Call him foolhardy. Call him, if you must, quixotic. But you really can't blame Brian Stokes Mitchell for wanting to take on the title role in ''Man of La Mancha,'' which opened last night in a stiflingly overscaled production at the Martin Beck Theater.
